Ingredients list for Strawberry Bread Pudding
- 8 White bread slices
- Strawberry compote for spreading
- Butter for greasing and spreading
- ½ cup Sugar
- 4 Eggs
- 1 teaspoon Vanilla essence
- 2 cups Milk
- for dusting Icing sugar
Method
- Preheat oven to 180º C. Grease a large oval glass baking dish with some butter.
- Discard the edges of the bread slices.
- Spread some butter on 4 slices and some strawberry compote on the remaining slices. Cover each buttered slice with the remaining slices, strawberry side down.
- Cut each sandwich into 4 equal pieces.
- To prepare custard, combine sugar, eggs and vanilla essence in a bowl and whisk with an electric beater. Add milk gradually and whisk well.
- Line the greased baking dish with bread pieces and pour custard mixture on top.
- Place the baking dish on a baking tray. Place the tray in the preheated oven and bake for 40-50 minutes or till the custard is set. Remove from oven and cool.
- Dust with icing sugar and serve immediately.
