Ingredients
- 2 teaspoons oil
- 1 tablespoon garlic
- 1 medium onion, finely chopped
- 1cup spinach leaves, boiled and chopped
- Salt to taste
- 2 teaspoons crushed black pepper
- 30 grams Feta cheese
- 5-6 phyllo pastry sheets
- ¼ cup melted butter
Method
- Heat oil in a non-stick pan, add garlic and onion, mix and sauté till fragrant and translucent.
- Add spinach and mix well. Add salt and mix. Add crushed black peppercorns and mix well.
- Add feta cheese, mash with the back of the spoon and mix. Set aside to cool down to room temperature.
- Preheat oven to 180° C. Grease a baking tray.
- Brush butter in between 6 phyllo sheets kept one over the other. Similarly brush butter in between remaining 6 phyllo sheets kept one over the other.
- Once all the layers are brushed with butter, spread the prepared spinach mixture on top in a single line on one end. Roll into a cylinder till you reach the centre of the philo sheet and cut. Brush the open edge with butter to seal. Make more rolls similarly.
- Roll the cylinders into spirals. Arrange them on a baking tray and brush with butter. Place the tray in the preheated oven and bake for 10-12 minutes.
- Bring the tray out of the oven, arrange the spirals on serving platter and serve warm.
