Ingredients list for Spicy Mexican Salad
- 1/4 cup Sweet Corn
- 1 cup Red Kidney Beans boiled
- 2 medium Onions
- 1 large Fresh red chilli
- 1/2 medium Green capsicum
- to taste Salt
- a few sprigs Fresh coriander leaves
- 1 tablespoon Hot and sweet sauce
- 5-6 Iceberg lettuce
- 1/2 Lemon
- a handful Tortilla chips
Method
- Slice onions, finely chop fresh red chilli and slice green capsicum.
- Place rajma in a large glass bowl. Add sweet corn, onions, red chilli, capsicum and salt.Roughly chop coriander leaves and add.
- Add sweet and spicy sauce. Tear iceberg leaves and add. Squeeze lemon and add the juice and mix well.
- Crush corn chips and add. Toss and serve immediately.
