Ingredients list for Spanish Tortilla
- 2-3 medium Potatoes peeled, quartered and finely sliced
- 1 large Onion sliced
- 4 tablespoons Olive oil
- 1 tablespoon Butter
- to taste Salt
- 8 Eggs beaten
- 2-3 Garlic cloves crushed
- a pinch Crushed black peppercorns
- for garnish Fresh parsley chopped
Method
- Heat olive oil and butter in a non-stick pan. Add onion and sauté till it turns soft.
- Add potatoes, cover and cook for fifteen to twenty minutes, stirring occasionally.
- Add salt to the beaten eggs and mix well.
- Add garlic and crushed peppercorns to the potatoes and mix well. Add eggs, cover and cook for twenty minutes.
- Slide the tortilla onto a plate and place another plate on top, turn the whole thing over and slide it back into the pan to cook the other side.
- Garnish with parsley and serve warm.
