Ingredients
- 1½ cups boiled spaghetti
- 12-15 prawns (kolambi/jhinga), shelled and deveined
- 2 inch leeks
- 1 teaspoon dried tarragon
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- Salt to taste
- Black pepper powder to taste
- 1 teaspoon lemon rind
- 1 tablespoon lemon juice
- 1 cup fresh cream
- 5-7 parmesan cheese shavings
Method
- Roughly chop leeks.
- Heat olive oil in a non-stick pan, add garlic and sauté for a minute.
- Add chopped leeks and sauté for 2-3 minutes.
- Add prawns, salt, pepper powder, lemon rind, lemon juice and fresh cream and cook for 2-3 minutes.
- Add spaghetti, tarragon, parmesan shavings reserving some for garnishing and cook for 2-3 minutes.
- Serve hot garnished parmesan shavings.
