Ingredients list for Sandesh Modak
- 2 litres Full cream milk
- 2 tablespoons Yogurt
- 3/4 cup Castor sugar (caster sugar)
- 1/2 cup Khoya/mawa grated
- 1/2 teaspoon Green cardamom powder
- 2 teaspoons Dried rose petals
- 8-10 Pistachios blanched, peeled and slivered
Method
- Boil milk in non-stick pan. Add yogurt and mix well. Once the milk curdles, strain the mixture in a bowl through muslin cloth.
- Gather the edges and immediately refresh in chilled water to avoid carry over cooking
- Transfer the mixture in a parat, add sugar and mix well. Add khoya, green cardamom powder and mix again.
- Transfer this mixture in a non-stick pan and cook for 3-4 minutes.
- Add dried rose petals, pistachios and mix well and continue to cook for 2-3 minutes.
- Transfer the mixture on a plate and allow to cool.
- Transfer the mixture into modak moulds and press lightly.
- Demould and serve.
