Ingredients
- 2 boneless chicken breast, boiled and chopped
- 3 hard boiled eggs
- 1 medium onion, cut into 1/2 inch pieces
- 4 medium potatoes, boiled
- 2 medium tomatoes, seeded and cut into ½- inch pieces
- 6 chilled lettuce leaves
For dressing
- 3/4 cups mayonnaise
- Salt to taste
- 1 teaspoon white pepper powder
Method
- Peel and cut the eggs length ways into eight slices. Peel and cut the potatoes into half-inch cubes Combine the chicken, eggs, onion and potatoes in large bowl.
- In a separate small bowl, combine the mayonnaise with salt and white pepper powder. Add the dressing to the chicken mixture and mix well.
- Line a bowl with lettuce leaves and spoon the salad into the bowl. Decorate with chopped tomato, cover with cling film and place in a refrigerator for twenty-five to thirty minutes.
- Serve chilled.
