Ingredients list for Rosa Cookies

  • 2 cups Coconut milk
  • 1 1/2 cups Refined flour (maida)
  • 2 Eggs
  • 3/4 cup Sugar
  • 1/2 teaspoon Salt
  • 2 teaspoons Vanilla essence
  • 2 tablespoons Oil

Method

  1. Preheat the oven at 180°C. In a large bowl beat together eggs, sugar, salt, vanilla essence until thick. Mix in coconut milk. Stir in flour a little at a time, beating continuously until a smooth batter is formed. Blend in two tablespoons of oil. If the batter becomes thick, it can be thinned down by adding little milk.
  2. Pour the batter into greased cookie moulds and bake in the preheated oven at 180°C for twenty minutes. De-mould when slightly cool. Store in an airtight tin when completely cooled.
