Ingredients list for Rosa Cookies
- 2 cups Coconut milk
- 1 1/2 cups Refined flour (maida)
- 2 Eggs
- 3/4 cup Sugar
- 1/2 teaspoon Salt
- 2 teaspoons Vanilla essence
- 2 tablespoons Oil
Method
- Preheat the oven at 180°C. In a large bowl beat together eggs, sugar, salt, vanilla essence until thick. Mix in coconut milk. Stir in flour a little at a time, beating continuously until a smooth batter is formed. Blend in two tablespoons of oil. If the batter becomes thick, it can be thinned down by adding little milk.
- Pour the batter into greased cookie moulds and bake in the preheated oven at 180°C for twenty minutes. De-mould when slightly cool. Store in an airtight tin when completely cooled.
