Revani

A Turkish delight – warm rose flavoured sugar syrup poured over cake slices and served. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Revani

  • 1 Refined flour (maida)
  • 2 Eggs
  • Olive oil ¼ cup + 2 tablespoons
  • Yogurt ¼ cup
  • Sugar ¼ cup
  • 1½ Baking powder
  • Semolina (suji) ¼ cup
  • ¼ Scraped coconut
  • 8-10 Almonds slit into halves
  • Sugar syrup -
  • 1 Sugar
  • ½ Lemon juice
  • 3 Rose water

Method

  1. Preheat oven to180° C. Grease a square cake tin with some olive oil.
  2. To make sugar syrup, heat one cup water in a non-stick pan. Add sugar, mix and bring to a boil. Cook for five to ten minutes. Add lemon juice and rose water and mix well. Set aside.
  3. Put eggs, yogurt, olive oil and sugar in another bowl and whisk till light and fluffy.
  4. Sieve together flour and baking powder into the egg mixture and mix well. Add the semolina and coconut and mix till there are no lumps.
  5. Pour the batter into the greased cake tin, place it in the preheated oven and bake for thirty to thirty-five minutes. Remove from oven, cool and demould.
  6. Cut the cake into squares and place on a serving platter.
  7. Warm the sugar syrup and pour on top of the cake squares. Garnish with almonds halves and serve.
