Ingredients list for Revani
- 1 Refined flour (maida)
- 2 Eggs
- Olive oil ¼ cup + 2 tablespoons
- Yogurt ¼ cup
- Sugar ¼ cup
- 1½ Baking powder
- Semolina (suji) ¼ cup
- ¼ Scraped coconut
- 8-10 Almonds slit into halves
- Sugar syrup -
- 1 Sugar
- ½ Lemon juice
- 3 Rose water
Method
- Preheat oven to180° C. Grease a square cake tin with some olive oil.
- To make sugar syrup, heat one cup water in a non-stick pan. Add sugar, mix and bring to a boil. Cook for five to ten minutes. Add lemon juice and rose water and mix well. Set aside.
- Put eggs, yogurt, olive oil and sugar in another bowl and whisk till light and fluffy.
- Sieve together flour and baking powder into the egg mixture and mix well. Add the semolina and coconut and mix till there are no lumps.
- Pour the batter into the greased cake tin, place it in the preheated oven and bake for thirty to thirty-five minutes. Remove from oven, cool and demould.
- Cut the cake into squares and place on a serving platter.
- Warm the sugar syrup and pour on top of the cake squares. Garnish with almonds halves and serve.
