Ingredients list for Red Curry Pineapple Prawn Skewers
- 1 1/2 tablespoons Pineapple
- 1 medium Prawn peeled
- 8 large Prawns shelled and deveined
- 8 large Light green chillies
- 2 Lemons
- 1/2 tablespoon Garlic chopped
- 1 tablespoon Schezwan chutney
- 1/4 cup Coconut milk
- to taste Salt
- Juice of ½ lemon
- 3 tablespoons Oil
Method
- Heat a non-stick grill pan. Halve the pineapple vertically, remove the centre hard portion of one half, and cut into thick wedges.
- Slit green chillies without cutting through and keeping the stems intact. Quarter the lemons.
- Put pineapple in a large bowl, add lemons, garlic, red curry paste, schezwan chutney, ¼ cup coconut milk and prawns and mix. Add salt and lemon juice. Let them marinate for ½ hour.
- Stuff each green chilli with a prawn.
- String onto each skewer a pineapple wedge, a prawn stuffed green chilli and a lemon piece.
- Heat oil in a non-stick grill pan and place the skewer, dab a little of the remaining marinade over them and grill, rotating the skewers, till the prawns are done.
- Transfer into a serving plate and serve hot.
