Ingredients list for Raw Mango Pie
- 2 cups + 4 + for dusting Refined flour (maida)
- ¾ cup Powdered sugar
- a pinch Salt
- 1 cup + 2 tablespoons Chilled butter chopped,
- FILLING
- 6 medium Raw mangoes peeled, deseeded and roughly chopped
- 1½ cups Sugar
- 1½ teaspoons Red chilli flakes
- 2 cups Vanilla sponge cake crumbled
Method
- Preheat oven to 180°C.
- To make the crust, take the flour in a bowl. Add salt, powdered sugar and butter and mix till it resembles breadcrumbs.
- Add 50 ml of chilled water and mix well. Transfer on the worktop and knead to make a stiff dough. Wrap in a cling film and refrigerate for two to three hours.
- To make the filling, heat raw mangoes in a non-stick pan. Add sugar, mix and cook till the moisture evaporates. Add chilli flakes and mix well. Remove from heat and cool.
- Add the cake crumbs to mango mixture and mix well.
- Dust the worktop with some flour, place the dough and roll out to make a half cm thick sheet.
- Line the pie mould with the sheet and put the mango-cake mixture on top.
- Put the pie mould in preheated oven and bake for fifteen to twenty minutes. Remove from oven, slightly cool and demould.
- Cut into wedges and serve warm.
