Ingredients 

  • 3 cups gram flour (besan)
  • 2 teaspoons clove powder
  • ½ teaspoon garam masala powder
  • ½ teaspoon carom seeds (ajwain)
  • Salt to taste
  • 4 tablespoons hot oil
  • 2 tablespoons oil + to deep fry 

Method

  1. Take gram flour in a bowl, add clove powder, garam masala powder, carom seeds, salt and hot oil. Add sufficient water and knead to a soft dough. Add 2 tbsps of oil and knead again.
  2. Heat sufficient oil in a kadai.
  3. Grease a chakli press fitted with a sev stencil with oil, and put a portion of the dough in it. Screw on the lid and press the sev directly into hot oil and deep-fry till light golden and crisp. Drain on absorbent paper and set aside to cool. Make more sev with the remaining dough.
  4. Transfer onto a serving plate, crush and serve.
