Rajgira Fruit Pizza

Ingredients list for Rajgira Fruit Pizza

  • 1 medium Orange
  • ½ cup Amaranth seeds (Rajgira), popped
  • 1 Kiwi peeled and cut into slices
  • 1 Muskmelon wedge, cut into slices
  • 6-8 Dried Berries
  • 1½ tablespoons Coconut oil
  • ½ cup Jaggery (gur) chopped
  • a pinch Salt
  • ½ teaspoon Green cardamom powder
  • ½ cup Hung yogurt
  • ¼ cup Walnuts toasted and crushed


  1. Separate orange segments and reserve the zest.
  2. Heat coconut oil in a non-stick pan. Add jaggery and salt, mix and cook till the jaggery melts.
  3. Add amaranth and mix well. Add cardamom powder and mix well.
  4. Divide the mixture immediately into 4 equal portions, spreading into small discs onto a silicon sheet. Set aside for 15-20 minutes.
  5. Mix together yogurt and orange zest in a bowl.
  6. Spread a spoonful of yogurt mixture over each disc. Arrange kiwi slices, orange segments and melon slices, top with berries and sprinkle walnuts.
  7. Serve immediately.
