Ingredients list for Rajgira Fruit Pizza
- 1 medium Orange
- ½ cup Amaranth seeds (Rajgira), popped
- 1 Kiwi peeled and cut into slices
- 1 Muskmelon wedge, cut into slices
- 6-8 Dried Berries
- 1½ tablespoons Coconut oil
- ½ cup Jaggery (gur) chopped
- a pinch Salt
- ½ teaspoon Green cardamom powder
- ½ cup Hung yogurt
- ¼ cup Walnuts toasted and crushed
Method
- Separate orange segments and reserve the zest.
- Heat coconut oil in a non-stick pan. Add jaggery and salt, mix and cook till the jaggery melts.
- Add amaranth and mix well. Add cardamom powder and mix well.
- Divide the mixture immediately into 4 equal portions, spreading into small discs onto a silicon sheet. Set aside for 15-20 minutes.
- Mix together yogurt and orange zest in a bowl.
- Spread a spoonful of yogurt mixture over each disc. Arrange kiwi slices, orange segments and melon slices, top with berries and sprinkle walnuts.
- Serve immediately.
