Ingredients list for Rajgira Chikki - SK Khazana

  • 1 cup Amaranth puffed
  • 1 cup Jaggery (gur) chopped
  • 1 1/2 tablespoons Cocout oil
  • Rock salt (sendha namak)
  • Green cardamom powder
  • 1/4 cup Mixed nuts slivered

Method

  1. Heat coconut oil in a non-stick pan, add jaggery and rock salt and mix till the jaggery melts.
  2. Add puffed rajgira, green cardamom powder and mixed nuts and mix well and cook for 1-2 minutes. Take the pan off the heat.
  3. Transfer the mixture into a greased burfi tray and spread it evenly. Keep aside for 5-10 minutes. Cut into squares and set aside to cool completely.
  4. Loosen the squares and serve or store in an airtight container as required.
