Ingredients list for Ragi Pancakes - SK Khazana
- 1 cup Nachani flour (finger millet flour)
- 1/2 cup Refined flour (maida)
- 1/2 teaspoon Baking powder
- to taste Salt
- 1/4 cup Castor sugar (caster sugar)
- 2 Eggs
- 2 teaspoons Vanilla essence
- 3/4 cup Milk
- Butter 2 tablesoonps melted butter + greasing
- Strawberries sliced, for garnish
- Blueberries for garnish
- Icing sugar for dusting
- Maple syrup for garnish
Method
- Sieve ragi flour, refined flour and baking powder into a bowl, dd salt and castor sugar. Break in eggs and add vanilla essence, milk and melted butter and whisk till you get a smooth batter.
- Heat a non-stick pan, Drizzle some melted butter and wipe it with a tissue. Pour a ladle of batter and cook on medium heat till the underside is cooked. Flip and cook the other side till done. Place it on a plate. Cook more pancakes similarly.
- Stack the pancakes one on top of the other on a serving plate.
- Dust icing sugar through a sieve on top and garnish with strawberries and blueberries. Drizzle maple syrup all over and around the pancake stack and serve.
