Ingredients
- 1/2 cup quinoa, cooked
- 1/2 cup pomegranate pearls
- 4 cups baby spinach leaves
- 1 small cucumber, peeled and diced
- 1 medium apple. chopped
- 1 small onion, chopped
Dressing
- 3/4 cup extra-virgin olive oil
- 1 teaspoon apple cider vinegar
- Salt to taste
- 1/4 teaspoon black pepper powder
- 1/4 teaspoon Italian seasoning
Method
- Combine baby spinach, cucumber, apples, quinoa, onion and pomegranate in a bowl and mix well.
- To make dressing, combine olive oil, vinegar, salt, pepper powder and Italian seasoning in another bowl and mix well.
- Pour the dressing over the salad and serve.
