Ingredients
- 1 apple
 - 20-24 baby spinach leaves, cleaned
 - 50 grams blue cheese
 - 2 tablespoons chopped hazelnuts
 - 3-4 tablespoons olive oil
 - Salt to taste
 - Crushed black peppercorns to taste
 - 2 teaspoons mustard paste
 
Method
- Roast hazelnuts in a non-stick pan till they turn light brown. Remove from heat and set aside.
 - Slice apple and place in a bowl. Add olive oil, salt, crushed peppercorns, mustard paste and mix well.
 - Add spinach and mix well.
 - Place the salad on a serving dish. Crumble blue cheese and add. Sprinkle roasted hazelnuts on top and serve immediately.
