Ingredients list for Prawns in Coconut Sauce Thai Style
- 300 grams Prawns (medium) shelled and deveined with tails intact
- 1 cup Thick coconut milk
- 2 Fresh red chillies chopped
- 1 medium Onion chopped
- 1 cup Galangal chopped
- 1 Lemon grass stalk chopped
- 1 teaspoon Turmeric powder
- 8 Basil leaves shredded
- 1 teaspoon Fish sauce
- 2 teaspoons Lemon juice
- to taste Salt
- for garnishing Spring onion greens chopped
Method
- Grind together red chillies, onion, galangal and lemon grass to a fine paste.
- Heat a non-stick wok, add the paste and cook, stirring continuously. Sprinkle a little water and cook further for 2-3 minutes.
- Add turmeric powder and ½ cup water. Stir to mix and bring the mixture to a boil, lower heat and simmer for 3-4 minutes.
- Stir in coconut milk. Add prawns and simmer, stirring occasionally, for 2-3 minutes. Add basil leaves, fish sauce and lemon juice, mix well and simmer for a minute. Adjust salt and mix well.
- Serve hot garnished with spring onion greens.
