Ingredients list for Prawns in Coconut Sauce Thai Style

  • 300 grams Prawns (medium) shelled and deveined with tails intact
  • 1 cup Thick coconut milk
  • 2 Fresh red chillies chopped
  • 1 medium Onion chopped
  • 1 cup Galangal chopped
  • 1 Lemon grass stalk chopped
  • 1 teaspoon Turmeric powder
  • 8 Basil leaves shredded
  • 1 teaspoon Fish sauce
  • 2 teaspoons Lemon juice
  • to taste Salt
  • for garnishing Spring onion greens chopped

Method

  1. Grind together red chillies, onion, galangal and lemon grass to a fine paste.
  2. Heat a non-stick wok, add the paste and cook, stirring continuously. Sprinkle a little water and cook further for 2-3 minutes.
  3. Add turmeric powder and ½ cup water. Stir to mix and bring the mixture to a boil, lower heat and simmer for 3-4 minutes.
  4. Stir in coconut milk. Add prawns and simmer, stirring occasionally, for 2-3 minutes. Add basil leaves, fish sauce and lemon juice, mix well and simmer for a minute. Adjust salt and mix well.
  5. Serve hot garnished with spring onion greens.
