Potato Rösti

Potato Rösti is a crispy, pan-fried dish originating from Sweden, made from grated potatoes, often pan-fried until golden brown and served as a side or snack. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3 large potatoes peeled
  • 4 teaspoons cornflour
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 fresh thyme sprig
  • Oil to cook
  • Butter to cook
  • Tomato ketchup to serve
  • Mustard sauce to serve

Method

  1. Grate potatoes in a bowl. Add cornflour, salt, crushed black peppercorns and fresh thyme, and mix well.
  2. Heat a little oil in a non-stick pan, place a medium-sized cookie cutter, put a portion of the potato mixture, flatten to make a small thick disc and gently remove the cookie cutter. Drizzle some butter all around and cook on medium heat, turning sides, till both sides are evenly golden and crisp. Drain them on absorbent paper. Similarly, cook the rest.
  3. Arrange them on a serving platter and serve hot with tomato ketchup and mustard sauce.
