Ingredients list for Pollo a La Brasa

  • Chicken cut into 4 pieces, 1 whole
  • 1/3 cup Soy sauce
  • 2 tablespoons Lemon juice
  • 5 Garlic cloves
  • 2 teaspoons Cumin powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Dried oregano
  • 1/2 teaspoon Crushed black peppercorns
  • Oil 1 tablespoon + for shallow frying

Method

  1. Preheat the oven at 180°C.
  2. Blend together soy sauce, lemon juice, garlic, cumin powder, paprika, oregano, crushed peppercorns and one tablespoon oil to a smooth paste.
  3. Marinate the chicken pieces with the prepared paste and set aside for twelve to twenty four hours.
  4. Heat some oil in a non-stick pan, add marinated chicken pieces and cook till the sides are browned.
  5. Remove and place the chicken pieces on a baking tray, put the tray in the preheated oven and bake for ten to twelve minutes or till fully cooked.
  6. Serve hot.
