  • 2 pizza base 
  • 1 medium tomato, chopped
  • ¼ cup roughly chopped mixed bell peppers 
  • ¼ cup boiled sweet corn kernels
  • ¼ cup grated cottage cheese (paneer)
  • ¼ cup grated processed cheese
  • ½ tablespoon red chilli flakes
  • ½ tablespoon dried oregano
  • Salt to taste
  • ¼ cup tomato ketchup + for serving
  • Butter for basting


  1. Preheat oven to 180˚C. 
  2. Mix together tomatoes, bell peppers, sweet corn, cottage cheese, processed cheese, chilli flakes, oregano, salt and tomato ketchup in a bowl. 
  3. Halve pizza base, stuff the pockets with the prepared mixture and seal the edges. 
  4. Transfer the stuffed pizza pockets on a baking tray, put the tray in the preheated oven and bake for 8-10 minutes. 
  5. Remove from oven and baste with butter. Cut the pockets into four pieces and transfer to a serving plate. 
  6. Serve hot with tomato ketchup.
