Ingredients
- 2 pizza base
- 1 medium tomato, chopped
- ¼ cup roughly chopped mixed bell peppers
- ¼ cup boiled sweet corn kernels
- ¼ cup grated cottage cheese (paneer)
- ¼ cup grated processed cheese
- ½ tablespoon red chilli flakes
- ½ tablespoon dried oregano
- Salt to taste
- ¼ cup tomato ketchup + for serving
- Butter for basting
Method
- Preheat oven to 180˚C.
- Mix together tomatoes, bell peppers, sweet corn, cottage cheese, processed cheese, chilli flakes, oregano, salt and tomato ketchup in a bowl.
- Halve pizza base, stuff the pockets with the prepared mixture and seal the edges.
- Transfer the stuffed pizza pockets on a baking tray, put the tray in the preheated oven and bake for 8-10 minutes.
- Remove from oven and baste with butter. Cut the pockets into four pieces and transfer to a serving plate.
- Serve hot with tomato ketchup.
