Ingredients list for Pistachio Lava Cupcakes
- ½ cup Pistachios paste
- 1 cup Dark chocolate ganache
- 2 cups + ¼ cup Refined flour (maida)
- 2 Eggs
- ½ cup Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
- ¼ cup Butter
- 1 teaspoon Baking powder
- 1 tablespoon Milk
Method
- Preheat oven to 180° C. Line a baking tray with individual cupcake moulds.
- Break eggs into a bowl and whisk till light and fluffy with an electric beater. Add castor sugar and whisk.Add vanilla essence and whisk. Add butter and whisk well.
- Sieve in together flour and baking powder and whisk. Add pistachio paste and whisk. Add milk and whisk well to a smooth batter.
- Fill the batter into a piping bag with and pipe out into cupcake moulds upto ½. Put in a scoop of ganache in each mould and pipe out remaining batter on top.
- Place the tray in preheated oven and bake for 15 minutes.
- Demould and serve hot.
