Ingredients list for Pistachio Lava Cupcakes

  • ½ cup Pistachios paste
  • 1 cup Dark chocolate ganache
  • 2 cups + ¼ cup Refined flour (maida)
  • 2 Eggs
  • ½ cup Castor sugar (caster sugar)
  • 1 teaspoon Vanilla essence
  • ¼ cup Butter
  • 1 teaspoon Baking powder
  • 1 tablespoon Milk


  1. Preheat oven to 180° C. Line a baking tray with individual cupcake moulds.
  2. Break eggs into a bowl and whisk till light and fluffy with an electric beater. Add castor sugar and whisk.Add vanilla essence and whisk. Add butter and whisk well.
  3. Sieve in together flour and baking powder and whisk. Add pistachio paste and whisk. Add milk and whisk well to a smooth batter.
  4. Fill the batter into a piping bag with and pipe out into cupcake moulds upto ½. Put in a scoop of ganache in each mould and pipe out remaining batter on top.
  5. Place the tray in preheated oven and bake for 15 minutes.
  6. Demould and serve hot.
