Ingredients for Pickled Cucumber Recipe

  • Green Cucumbers large light, unpeeled 2

  • Sugar 1 teaspoon

  • Salt to taste

  • Sugar 5 teaspoons

  • Vinegar 3 teaspoons


Step 1

For chilli oil, mix 1 tsp red chilli powder with 1 tbsp oil in a small non-stick pan and cook for 3-5 minutes.

Step 2

Cut cucumbers into long pieces, seed and roughly cut into big cubes. Add salt and set aside for 10-15 minutes.

Step 3

Drain excess water from the cucumbers mixture. Add sugar, vinegar and mix well. Add red chilli oil, mix and refrigerate for 3-4 hours.

Step 4

Serve as an accompaniment.
