Ingredients list for Pasta Sandwich
- 1 1/2 cups Macaroni boiled and cut into 1/2 cm pieces
- 8 slices Multigrain bread
- 2 teaspoons Olive oil
- 1 medium Onion chopped
- 3-5 cloves Garlic chopped
- 1 Red capsicum cut into 1/2 cm pieces
- 8-10 Mushrooms chopped
- to taste Salt
- 1/4 teaspoon Crushed black peppercorns
- 1/2 cup Tomato concasse
- 1/4 cup Tomato ketchup
- 3-4 Fresh basil leaves chopped
- as required Butter
- 1 cup Mozzarella cheese grated
Method
- Preheat oven to 180° C.
- Heat olive oil in a non-stick pan, add onion and sauté for a minute. Add garlic and sauté for ten seconds.
- Add capsicum and mushrooms and sauté for a minute. Add salt, crushed black peppercorns and sauté for thirty seconds.
- Add tomato concasse, tomato ketchup, basil leaves and pasta and mix well.
- Apply some butter on each bread slices and arrange it over the baking tray.
- Place the tray in the preheated oven and bake till the bread slices are well toasted. Divide the mixture into eight equal portions and put it over each bread slice.
- Sprinkle some mozzarella cheese on top and bake till the cheese melts.
- Serve hot.
