History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Papdi Pizza Recipe

  • Papdis as required

  • Pizza sauce as required

  • Potato boiled, peeled and cut into roundels 1 small

  • Chaat masala to sprinkle

  • Amchur powder to sprinkle

  • Onion cut into roundels and layers separated 1 medium

  • Mozzarella cheese grated as required

  • Green capsicum finely chopped ½ medium

  • Crushed black peppercorns to taste

  • Sev as required

  • Fresh coriander sprigs for garnishing

Method

Step 1

Preheat oven at 180º C. Line a baking tray with silicon mat.

Step 2

Place papris on the lined baking tray. Spread some pizza sauce on each papri. Put potato roundel and sprinkle some chaat masala and dried mango powder on top.

Step 3

Place onion rings on each papri and put some more pizza sauce, some mozzarella cheese and some capsicum in the center. Sprinkle some crushed peppercorns on top.

Step 4

Place the baking tray in preheated oven and bake till cheese melts.

Step 5

Place the baked papris on a serving platter and sprinkle some sev on top. Serve immediately garnished with coriander sprigs.
