History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Papaya Burfi Recipe

  • Papaya peeled, halved and seeded 1 medium

  • Khoya 1 tablespoon

  • Almonds finely chopped 2 tablespoons

  • Pistachios finely chopped 1 tablespoon

  • Sugar 1/2 cup

  • Green cardamom powder a pinch

  • Khoya/mawa grated 1 cup

Method

Step 1

Grate papaya and place in a bowl.

Step 2

Heat ghee in a non-stick pan. Add almonds and pistachios and sauté for 1- 2 minutes.

Step 3

Add papaya and sauté on high heat for 5-6 minutes. Add sugar, green cardamom powder and mix well till sugar dissolves. Cook for 8-10 minutes or till syrup reaches 1 string consistency.

Step 4

Add khoya and cook for 1-2 minutes. Switch off the heat and keep stirring for 8-10 minutes till the mixture cools.

Step 5

Line an aluminium tray with a cling film. Pour the mixture into the tray and allow it to set at room temperature for 1 hour and then in the refrigerator for 3-4 hours.

Step 6

Cut into squares, transfer into a serving plate and serve.
