Ingredients list for Papaya Barfi
- 1 cup Papaya ripe, puree
- ½ cup Coarse gram flour (besan)
- ¾ cup + for greasing Ghee
- ½ cup Milk
- a pinch Saffron (kesar)
- 1 cup Sugar
- ½ teaspoon Green cardamom powder
- 10-12 Pistachios slivered
Method
- Grease a barfi tray with some ghee.
- Dry roast gram flour in a non-stick pan on low heat till golden brown. Transfer into a bowl and set aside.
- Put papaya puree in the same pan and cook for 5-10 minutes.
- Heat ghee in another non-stick pan. Add milk, saffron and sugar, mix and bring to a boil.
- Add the roasted gram flour, papaya puree and cardamom powder, mix well and cook till the mixture thickens.
- Pour the mixture into the greased tray, spread evenly, sprinkle pistachios on top and set aside to set for 1 hour.
- Cut into pieces and serve.
