Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Palak Khichdi - cook smart Recipe

  • Fresh spinach (palak) 1 large bunch

  • Cooked rice 3 cups

  • Butter 2 tablespoons

  • Tata Sampann Dal Tadka Masala sachet 1 (20 gram

  • Garlic cloves finely chopped 10-15

  • Large onion finely chopped 1

  • Salt to taste

  • Green chillies finely chopped 2

  • Garam masala powder 1/2 teaspoon

  • Fresh cream 1/4 cup + for drizzling

  • Yellow capsicum strips for garnish

  • Red capsicum strips for garnish

Method

Step 1

Heat butter in a non-stick pan. Add half the Tata Sampann Dal Tadka Masala, garlic and sauté well.

Step 2

Add onion and sauté for 2 minutes. Add remaining Tata Sampann Dal Tadka Masala, mix and sauté for 4-5 minutes.

Step 3

Heat sufficient water in a deep non-stick pan. Add spinach leaves and salt and blanch for a minute.

Step 4

Transfer in chilled water, put in a blender jar, add little water and blend to a fine puree.

Step 5

Add green chillies to the onion and sauté. Add spinach puree and mix well. Add rice and mix well. Add salt and mix well.

Step 6

Add garam masala powder and cream, mix well and cook for 2-3 minutes.

Step 7

Drizzle some cream, garnish with yellow and red capsicum strips and serve hot.
