Ingredients list for Paella With Tofu
- 1 1/2 cups Paella rice (or short grained rice) soaked
- 150 grams Tofu ½ inch cubes
- 3 tablespoons Olive oil
- 1 medium Onion sliced
- 2 medium Tomatoes ½ inch pieces
- 2 teaspoons Red chilli powder
- 1/4 teaspoon Turmeric (haldi) powder
- Saffron (kesar) few strands
- 3 1/2 cups Vegetable stock
- to taste Salt
- 1/4 cup Green peas blanced
- 1 medium Red capsicum (lal shimla mirch) seeded, ½ inch pieces
- 1 medium Green capsicum (hari shimla mirch) seeded, ½ inch pieces
- 2 tablespoons Fresh coriander leaves (hara dhania) chopped
- 2 Lemons cut into wedges
Method
- Drain the soaked rice and set aside.
- Heat two tablespoons olive oil in a deep pan. Add onion and sauté till translucent. Add tomatoes and sauté for two minutes.
- Add red chilli powder, turmeric powder and saffron and mix. Add vegetable stock, salt and rice and mix again. Cook till rice is half done.
- Meanwhile heat the remaining olive oil in another pan and add green peas, red capsicum, green capsicum and tofu and toss till they are lightly browned and crunchy.
- Add these to the rice and cook till the rice is completely done.
- Serve hot garnished with coriander leaves and lemon wedges.
