Spanish cuisine is the result of a great variety of cooking cultures that have been living together in Spain.  The different climates and ways of life of each region to have played their role.  Some of the main ingredients that make up Spanish food are vegetables, meat and fish. 
Over the centuries Spain has been invaded by Romans, French, Moors, Phoenicians who introduced new cooking styles and ingredients in the Spanish cuisine, but the Spanish food is also influenced by other cultures. Spaniards were the main colonizers of America, Columbus was Spanish!  
The discovery of the New World brought new essential ingredients to the Mediterranean gastronomy like tomato, potato, chocolate that are now commonly used in a lot of Spanish dishes.

Ingredients for Paella With Tofu Recipe

  • Paella rice (or short grained rice) soaked 1 1/2 cups

  • Tofu ½ inch cubes 150 grams

  • Olive oil 3 tablespoons

  • Onion sliced 1 medium

  • Tomatoes ½ inch pieces 2 medium

  • Red chilli powder 2 teaspoons

  • Turmeric (haldi) powder 1/4 teaspoon

  • Saffron (kesar) few strands

  • Vegetable stock 3 1/2 cups

  • Salt to taste

  • Green peas blanced 1/4 cup

  • Red capsicum (lal shimla mirch) seeded, ½ inch pieces 1 medium

  • Green capsicum (hari shimla mirch) seeded, ½ inch pieces 1 medium

  • Fresh coriander leaves (hara dhania) chopped 2 tablespoons

  • Lemons cut into wedges 2


Step 1

Drain the soaked rice and set aside.

Step 2

Heat two tablespoons olive oil in a deep pan. Add onion and sauté till translucent. Add tomatoes and sauté for two minutes.

Step 3

Add red chilli powder, turmeric powder and saffron and mix. Add vegetable stock, salt and rice and mix again. Cook till rice is half done.

Step 4

Meanwhile heat the remaining olive oil in another pan and add green peas, red capsicum, green capsicum and tofu and toss till they are lightly browned and crunchy.

Step 5

Add these to the rice and cook till the rice is completely done.

Step 6

Serve hot garnished with coriander leaves and lemon wedges.
