Ingredients list for One Pot Chicken and Lemon Rice
- 4 Chicken on the bone
- 1½ cups Rice soaked
- Zest of 1 lemon
- 4 tablespoons Lemon juice
- 1 tablespoon Fresh oregano chopped
- 4-5 Garlic cloves chopped
- to taste Salt
- 1½ tablespoons Olive oil
- 1 small Onion finely chopped
- 2 cups Chicken stock
- for garnishing Fresh parsley sprigs
- for garnishing Lemon slices
Method
- Preheat the oven 180ºC.
- Combine lemon zest, lemon juice, oregano, garlic and salt in a bowl. Add chicken and mix well. Set aside for 10 to 15 minutes.
- Heat 1 tablespoon olive oil in a non-stick pan. Add onion and sauté till translucent.
- Add the rice, mix and sauté for 2 to 3 minutes.
- Add the chicken stock, mix and cook for a minute. Transfer in an oven proof dish.
- Heat the remaining olive oil in the same pan. Add the chicken and sear till light brown from both sides.
- Arrange the seared chicken pieces on top of the rice. Cover with aluminium foil and place on a baking tray. Add water in the tray, put the tray in the preheated oven and bake for 15-20 minutes or till all the liquid is absorbed.
- Garnish with parsley sprigs and lemon slices. Serve hot.
