Ingredients
- 1 1/2 cups red pumpkin, peeled and sliced
- 3 green chillies, slit
- Salt to taste
- 3/4 cup dried red chavli beans, soaked overnight and boiled
- 1 cup coconut milk
- 1 tablespoon coconut oil
- 7-8 curry leaves
Method
- Heat a non-stick pan. Add pumpkin, chillies, sufficient water and salt, mix and cook till the pumpkin is fully done.
- Add red chavli beans, mix gently and cook for 2-3 minutes.
- Add coconut milk and mix gently. Switch off heat just as the mixture comes to a boil.
- Add coconut oil and curry leaves, mix gently and serve hot.
