Ingredients 

  • 1 1/2 cups red pumpkin, peeled and sliced
  • 3 green chillies, slit
  • Salt to taste
  • 3/4 cup dried red chavli beans, soaked overnight and boiled
  • 1 cup coconut milk
  • 1 tablespoon coconut oil
  • 7-8 curry leaves

Method

  1. Heat a non-stick pan. Add pumpkin, chillies, sufficient water and salt, mix and cook till the pumpkin is fully done.
  2. Add red chavli beans, mix gently and cook for 2-3 minutes.
  3. Add coconut milk and mix gently. Switch off heat just as the mixture comes to a boil.
  4. Add coconut oil and curry leaves, mix gently and serve hot.
