Ingredients list for Noodle Salad

  • 1/2 cup Noodles boiled
  • 1 medium Vegetables cut into small pieces
  • 1 medium Capsicum cut into thick strips
  • 1 cup Peanuts crushed
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Red chilli powder
  • 1 teaspoon Oil
  • 1 teaspoon Mustard seeds
  • 4-5 Curry leaves
  • to taste Salt
  • 2 tablespoons coriander leaves

Method

  1. Mix together carrot, capsicum, peanuts, lemon juice, red chilli powder in a bowl.
  2. Heat oil in a non stick pan. Add mustard seeds.
  3. Once they splutter, add curry leaves and add this to the salad.
  4. Add boiled noodles and mix well.
  5. Refrigerate for one hour. Add salt and mix well.
  6. Serve chilled garnished with coriander leaves.
