Ingredients list for New Orleans Style Rice
- 1 cup Basmati rice soaked
- 1/4 cup Red kidney beans (rajma) soaked
- 1 tablespoon Garlic finely chopped
- 1 teaspoon Celery finely chopped
- 2 medium Onions chopped
- 1/2 small Red capsicum
- 1/2 small Green capsicum
- 2 tablespoons Oil
- 2 tablespoons Green peas boiled
- 2 tablespoons Corn kernels
- 2-3 Chicken sausages
- to taste Salt
- 1/4 teaspoon Cayenne pepper
- 1 teaspoon Crushed black peppercorns
- 1/2 teaspoon Dried thyme
Method
- Heat oil in a shallow non stick pan. Add garlic, celery and onions and sauté for 1 minute. Roughly chop red and green peppers and put in blender. Crush and add to the pan, mix well and sauté for 2 minutes.
- Add kidney beans, peas and corn kernels. Diagonally slice sausages and add along with 2 cups water, salt, cayenne pepper, crushed peppercorns, thyme and rice.
- Mix and cook on high heat till almost done. Cover and cook on medium heat till completely done.
