How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for New Orleans Style Rice Recipe

  • Basmati rice soaked 1 cup

  • Red kidney beans (rajma) soaked 1/4 cup

  • Garlic finely chopped 1 tablespoon

  • Celery finely chopped 1 teaspoon

  • Onions chopped 2 medium

  • Red capsicum 1/2 small

  • Green capsicum 1/2 small

  • Oil 2 tablespoons

  • Green peas boiled 2 tablespoons

  • Corn kernels 2 tablespoons

  • Chicken sausages 2-3

  • Salt to taste

  • Cayenne pepper 1/4 teaspoon

  • Crushed black peppercorns 1 teaspoon

  • Dried thyme 1/2 teaspoon

Method

Step 1

Heat oil in a shallow non stick pan. Add garlic, celery and onions and sauté for 1 minute. Roughly chop red and green peppers and put in blender. Crush and add to the pan, mix well and sauté for 2 minutes.

Step 2

Add kidney beans, peas and corn kernels. Diagonally slice sausages and add along with 2 cups water, salt, cayenne pepper, crushed peppercorns, thyme and rice.

Step 3

Mix and cook on high heat till almost done. Cover and cook on medium heat till completely done.
