Ingredients list for New Orleans Style Rice

  • 1 cup Basmati rice soaked
  • 1/4 cup Red kidney beans (rajma) soaked
  • 1 tablespoon Garlic finely chopped
  • 1 teaspoon Celery finely chopped
  • 2 medium Onions chopped
  • 1/2 small Red capsicum
  • 1/2 small Green capsicum
  • 2 tablespoons Oil
  • 2 tablespoons Green peas boiled
  • 2 tablespoons Corn kernels
  • 2-3 Chicken sausages
  • to taste Salt
  • 1/4 teaspoon Cayenne pepper
  • 1 teaspoon Crushed black peppercorns
  • 1/2 teaspoon Dried thyme

Method

  1. Heat oil in a shallow non stick pan. Add garlic, celery and onions and sauté for 1 minute. Roughly chop red and green peppers and put in blender. Crush and add to the pan, mix well and sauté for 2 minutes.
  2. Add kidney beans, peas and corn kernels. Diagonally slice sausages and add along with 2 cups water, salt, cayenne pepper, crushed peppercorns, thyme and rice.
  3. Mix and cook on high heat till almost done. Cover and cook on medium heat till completely done.
