Mushroom Balchao

A spicy Goan pickle made from whole spices and onion-tomato based masala. Normally prawns are used but here prawns are replaced with mushrooms.

Ingredients 

  • 600 grams fresh button mushrooms, quartered
  • 10-12 dried red chillies
  • 8-10 garlic cloves 
  • 1 inch ginger piece 
  • 1 teaspoon cumin seeds
  • 7-8 cloves
  • 1 teaspoon mustard seeds
  • 1 inch cinnamon stocks
  • Salt to taste
  • 1/2 cup malt vinegar
  • 2 tablespoons oil
  • 2 medium onions, chopped
  • 2 medium tomatoes, chopped
  • 3/4 cup tomato puree
  • 1 tablespoon sugar

Method

  1. Grind the red chillies, garlic, ginger, cumin seeds, cloves, mustard seeds, cinnamon and salt with one-fourth cup of malt vinegar to a fine paste.
  2. Heat the oil in a kadai; add the onions and sauté till light brown. Add the tomatoes, mix well and cook for five minutes, stirring continuously. Add the mushrooms, tomato purée and ground masala and cook for three or four minutes.
  3. Add the sugar, more salt if necessary and mix well. Add the remaining malt vinegar and cook for five to seven minutes. Serve.
