Ingredients
- 1 medium banana stem (thandu)
- 1½ cups buttermilk (slightly sour)
- ½ tsp cumin seeds
- A pinch of turmeric powder
- Salt to taste
- 2 whole red chillies
- 3 tsp scraped fresh coconut .
- 2 tsps oil .
- ¼ tsp mustard seeds .
Method
- Remove the outer skin of the thandu and cut into round slices. Cut each slice further into long pieces.
Cook the cut pieces in water with the turmeric powder and salt. After the vegetable has cooked drain off the excess water. - Make a paste with the chillies, coconut and cumin seeds and add to the buttermilk.
- Add the cooked vegetable and adjust salt. Cook for 3 minutes.
- Heat oil, add mustard seeds. When they crackle add to the vegetable.
