How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Moongdal Khichdi Recipe

  • Rice 1 cup

  • Split Green Gram 3/4 cup

  • Green chillies 2

  • Cumin seeds 1/2 teaspoon

  • Salt to taste

  • Bay leaf 1

  • Ginger 1 inch piece

  • Pure ghee 2 tablespoons

Method

Step 1

Wash and drain the moong dal and rice separately. Peel and finely chop the ginger. Wash and slit the green chillies. Heat a thick bottomed vessel or pressure cooker, add pure ghee and cumin seeds and fry till the seeds begin to crackle. Add slit green chillies and chopped ginger.

Step 2

Sauté. Add the moong dal and rice with sufficient water and salt to taste so that the khichdi turns into a creamy consistency when cooked. Once the khichdi is ready, add a little extra ghee for taste. Serve hot.
