If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Mixed Vegetable Soup Recipe

  • Carrot

  • Milk 2 tablespoons

  • Bay leaf 1

  • Onion 1 medium

  • Leeks 2 inch piece

  • Carrot 1 medium

  • Cabbage leaves

  • Celery 2 inch piece

  • Black peppercorns 6-8

  • Salt to taste

  • FOR THE SOUP

  • Carrot chopped 1/2 medium

  • Potato 1 medium

  • Cabbage chopped 2 tablespoons

  • Fresh spinach leaves (palak) chopped 2 tablespoons

  • Sweet corn kernels 1/4 tin

  • Oil 2 tablespoons

  • Onion 1 medium

  • Leek chopped 1 inch piece

  • Whole wheat flour (atta) 2 tablespoons

  • Salt to taste

  • Black pepper powder 1/4 teaspoon

  • Milk 2 cups

Preparation

Step 1


For the vegetable stock, heat oil in a deep non stick pan. Add bay leaf. Roughly chop onion and leek and add. Slice carrot and add. Roughly chop cabbage and add. Roughly chop celery and add and sauté for 2-3 minutes. Add peppercorns and 5 cups of water and salt and mix well. Let the mixture boil for ½ hour. Strain and use.

Step 2


For the soup heat oil in another deep non stick pan. Chop onion and add. Add carrot, leek and mix. Chop potato and add and sauté everything for 2-3 minutes. Add whole wheat flour and sauté till raw smells disappear.Drain sweet corn and rinse in fresh water. Strain the vegetable stock and add 2 cups of it gradually to the vegetables, stirring continuously so as to avoid lumps.

Step 3


Add salt, black pepper powder, cabbage and corn and mix well. Cook for 2 minutes. Add milk and mix well. Add spinach and mix well. Cook for 1-2 minutes. Serve hot.
