Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Minty Mushrooms Recipe

  • Mushroom 400 grams

  • Mint leaves 1 cup

  • Garlic 12 cloves

  • Oil 2 tablespoons

  • Salt to taste

  • Crushed black peppercorns 1/2 teaspoon

  • Lemon juice 2 teaspoons

  • Iceberg lettuce a few

Method

Step 1

Place garlic, mint leaves, 2-3 tbsps oil in a mixer jar and grind to a fine paste. Heat 1 tbsp oil in a non-stick pan.

Step 2

Separate the stems of the mushrooms and add all of it the pan and sauté. Add salt and crushed peppercorns and sauté.

Step 3

When the moisture evaporates, add the ground paste and lemon juice and mix well.

Step 4

Place the iceberg lettuce leaves in a serving plate, keep the mushrooms over them and serve hot.
