Ingredients list for Meetha Poha
- 2 1/4 tablespoons Pressed Rice grated
- 3 tablespoons Jaggery
- 1 cup Pressed rice (poha)
- 1 1/2 tablespoons Ghee
- 8-10 Cashewnuts halved
- 2 tablespoons Raisins
- a few strands Saffron (kesar)
- 1/2 teaspoon Green cardamom powder
Method
- Heat ghee in a non-stick pan. Add cashewnuts and raisins and sauté for 2 minutes. drain and set aside in a bowl.
Soak saffron in ½ cup water in a bowl and heat in the microwave for 1 minute. - Add poha to the ghee remaining in the pan and sauté for 2-3 minutes.
Add saffron water and mix and cook till poha is half done. - Add sugar and mix. Add green cardamom powder and mix again. Cook for 2-3 minutes.
- Add jaggery, mix gently and cook till fully done.
Reserve a few fried dry fruits and add the remaining. Mix well and cook for 1 minute.
Garnish with the reserved fried dry fruits and serve hot.
