Ingredients list for Medu Vada

  • 1 cup Split black gram skinless (dhuli urad dal) , soaked for 6-8 hours and drained
  • 5-6 Curry leaves , chopped
  • 2 tablespoons Fresh coconut , chopped
  • 1-2 Green chillies , finely chopped
  • to taste Crushed black peppercorns
  • to taste Salt
  • for deep-frying Oil
  • to serve Coconut chutney


  1. Put split skinless black gram in a grinder jar, add some water and grind into a smooth and thick batter. Transfer into a bowl.
  2. Add curry leaves, coconut, green chillies, crushed peppercorns and salt and mix well.
  3. Heat sufficient oil in a kadai.
  4. Dampen your palms with some water, take a portion on the batter, make a hole in the center, slide into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. Make more medu vadas similarly.
  5. Arrange them on a serving plate and serve hot with coconut chutney.
