Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Masala Mashed Potatoes Recipe

  • Potatoes boiled, peeled and mashed 1 cup

  • Extra virgin olive oil 1 tablespoon

  • Butter 1 teaspoon

  • Onion 1 medium

  • Asafoetida 1/4 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Curry leaves 20-25

  • Green chilli chopped 1

  • Salt to taste

  • Curry leaves deep fried 5-6

  • Dried red chilli deep fried 1

Method

Step 1

Heat extra virgin olive oil in a non stick pan. Add butter and let it melt. Chop onion.

Step 2

Add asafoetida and mustard seeds to the pan and let the seeds splutter. Add cumin seeds, curry leaves and onion and saute for 1 minute. Add mashed potatoes and switch off the heat.

Step 3

Add green chilli, salt and mix well. Grease a stainless steel ring lightly and place it in the centre of the serving plate.

Step 4

Put the potato mixture into the ring but do not press it or level the surface. Garnish with fried curry leaves, fried red chilli, slowly remove the ring and serve.
