Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lychee Kheer Recipe

  • Lychees 300 grams

  • Milk 5 cups

  • Basmati rice 2 tablespoons

  • Mawa (khoya) grated 3 tablespoons

  • Sugar 1/2 cup

  • Green cardamom powder 1/2 teaspoon

  • Rose water a few drops

  • Almonds blanched and slivered 12

  • Pistachios blanched and slivered 12


Step 1

Drain and roughly chop lychees. Soak basmati rice for fifteen minutes, drain and grind coarsely.

Step 2

Take milk in a deep, thick-bottomed pan and boil for ten minutes stirring continuously so that skin does not form on top.

Step 3

Add coarsely ground rice and cook till rice granules are soft.

Step 4

Add khoya and sugar. Add chopped lychees and stir for two minutes.Sprinkle green cardamom powder and rose water. Remove from heat.

Step 5

Cool kheer and pour into individual serving bowls. Sprinkle with sliced almonds and pistachios. Serve chilled.
