Ingredients list for Lemon Pudding
- 5 tablespoons Lemon juice
- 1 teaspoon Lemon zest
- 4 Eggs seperated
- 30 grams Butter softened
- 300 grams Castor sugar (caster sugar)
- 4 tablespoons Refined flour (maida)
- 1/2 teaspoon Salt
- a pinch Cinnamon powder
- 350 millilitres Milk
Method
- Preheat oven to 180° C.
- Beat together egg yolks, lemon juice, lemon zest and butter in a bowl till thick.
- Mix together sugar, flour, salt and cinnamon powder and add, alternating with milk, to the yolk mixture and beat well after each addition.
- Beat egg whites till stiff and gently fold into to flour mixture.
- Pour the batter into a twenty centimeter square baking dish.
- Place a pan of hot water in the oven, keep the baking dish in it and bake for forty five minutes.
- Serve warm.
