Ingredients list for Lemon Chicken With Chickpeas

  • 2 Lemons
  • 750 grams Chicken on the bone cut into 1½ inch pieces
  • 1 cup Chickpeas (kabuli chana) boiled
  • 1 tablespoon Extra virgin olive oil
  • 3-4 cloves Garlic
  • 1 1/2 tablespoons Refined flour (maida)
  • to taste Salt
  • 3/4 teaspoon Crushed black peppercorns
  • 1 1/2 cups Chicken stock
  • 2-3 tablespoons Tomato puree

Method

  1. Heat olive oil in a deep non stick pan. Crush garlic and add and sauté for 1 minute. Add chicken and sauté, stirring occasionally, for 4-5 minutes. Cut each lemon into 8 equal parts and remove the seeds.
  2. Add refined flour to the chicken and mix well. Sauté for 1 minute and add salt, peppercorns and mix well. Add chicken stock and mix. Add chickpeas and mix again. Add tomato puree and mix. Add the lemon pieces and mix gently. Cover and cook on high heat for 5-7 minutes. Reduce heat and cook for 15-20 minutes or till chicken is completely done. Serve hot.
