History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lapsi Recipe

  • Broken wheat (lapsi) 1 1/2 cups

  • Ghee 1/2 cup

  • Green cardamoms 2-3

  • Fennel seeds 1 teaspoon

  • Sugar 1 cup

  • Cashewnuts roughly chopped 1/4 cup

  • Almond slivers 1/4 cup + to garnish

  • Raisins 1/4 cup

Method

Step 1

Heat ghee in a non-stick kadai, add green cardamoms and fennel seeds, mix and sauté till fennel seeds turn brown. Add broken wheat, mix well and saute on medium heat, stirring continuously, for 8-10 minutes or till it turns golden brown in colour.

Step 2

Meanwhile heat 3 cups water in a deep non-stick pan.

Step 3

Add hot water to the sauteed daliya, mix well, cover and cook, on medium heat, stirring occasionally for 10-15 minutes.

Step 4

Add sugar, cashewnuts, almonds and raisins, mix well and cook for 2-3 minutes or till the sugar melts.

Step 5

Transfer lapsi in a serving bowl and serve hot, garnished with almond slivers.
