Ingredients list for Kolmi Nu Khattu Mitthu Achaar
- 4 cups Jumbo prawns deveined
- 3 cups Sugarcane vinegar
- 8-10 Green chillies slit and deseeded
- 1 sprigs Curry leaves
- to taste Salt
- 10-15 Kashmiri red chillies
- 3-4 cloves Garlic
- 3 tablespoons Cumin seeds
- 1 teaspoon Mustard seeds
- 1 teaspoon Fenugreek seeds (methi dana)
- 1 teaspoon Turmeric powder
- 1/2 teaspoon Fennel seeds (saunf)
- 2 cups Oil
- 11/2 cups Jaggery (gur) grated
Method
- Take a saucepan. Add prawns, two cups of sugarcane vinegar, green chillies, curry leaves and salt and cook for five to seven minutes till prawns are tender.
- Grind together Kashmiri chillies, garlic, cumin seeds, mustard seeds, fenugreek seeds, turmeric powder and fennel seeds to a fine paste. Heat oil in a pan. Add ground masala and sauté for two minutes stirring.
- Stir in jaggery and mix till it dissolves completely into the masala. Add prawn mixture with the vinegar. Cook on low heat for ten minutes. Cool completely and pour into a sterilized air tight jar.
