Ingredients list for Khau Swe

  • 800 grams Chicken cut into pieces
  • 1/2 cup Coconut Milk
  • 1/2 teaspoon Turmeric powder
  • 3 medium Onions finely chopped
  • 4 cloves Garlic crushed
  • 1 inch piece Ginger chopped
  • 1 inch stick Cinnamon
  • 1 Bay leaf
  • 1 teaspoon Coriander powder
  • 2 teaspoon Cumin powder
  • 1 teaspoon Red chilli pepper
  • 8 cups Chicken stock
  • to taste Salt
  • 500 grams Noodles
  • 2 tablespoons Gram flour (besan)
  • 1 tablespoon Fish sauce
  • 2 cups Coconut milk
  • Condiments
  • 3 Hard boiled eggs peeled and quartered
  • 2 Onions thinly sliced
  • 3 Spring onions thinly sliced
  • 2 Lemons cut into wedges
  • 3 tablespoons Fresh coriander leaves
  • 1 teaspoon Red chilli flakes
  • 12 Garlic sliced diagonally and fried until golden


  1. Heat oil in a pan. Add turmeric powder and onions and sauté till onions soften.
  2. Add garlic and ginger and sauté for a minute.
  3. Add cinnamon and bay leaf and continue to sauté.
  4. Add chicken, coriander powder, cumin powder and red chilli powder and mix.
  5. Add chicken stock and salt and bring the mixture to a boil.
  6. Cook till the chicken is almost done.
  7. Meanwhile boil the noodles till just done.
  8. Drain, refresh and drain again and set aside in a bowl.
  9. Mix gram flour in quarter cup of water and add to the chicken.
  10. Stir and cook till the gravy thickens.
  11. Add fish sauce and mix. Add coconut milk and stir and let it heat through.
  12. Pour the chicken gravy over the noodles.
  13. Serve the condiments in separate bowls.
  14. Each person then can add the condiments as per their choice and eat.
