Ingredients
- A large pinch of saffron soaked in water
- 250 grams cottage cheese (paneer) cut into 1-inch cubes
- 3-4 tablespoons fresh cream
- 1 teaspoon ginger-garlic paste
- ½ teaspoon green chilli paste
- 1 tablespoon gram flour (besan) roasted
- Salt to taste
- Chaat masala to sprinkle
- 1 medium red capsicum cut into 1-inch squares
- 1 medium green capsicum cut into 1-inch squares
- 1 medium yellow capsicum cut into 1-inch squares
- Butter for cooking + basting
- Oil as required
- A few strands of saffron + to garnish
- Green chutney to serve
- Onion rings to serve
- Lemon slices to serve
Method
- Take fresh cream in a shallow bowl, add ginger-garlic paste and green chilli paste and mix well. Add 3 tsps saffron water with a few strands. Add gram flour and mix well to make a thick marinade.
- Add salt and mix. Sprinkle chaat masala on the cottage cheese pieces and add them to the marinade. Mix well till all the pieces are well coated.
- Add red, green and yellow capsicums to the marinade. Sprinkle a little salt over them and mix well. Set aside for 10-15 minutes.
- Skewer the mixed capsicums and cottage cheese in this way: yellow capsicum, cottage cheese, green capsicum, cottage cheese and red capsicum. Similarly, prepare more skewers.
- Heat some butter and oil in a non-stick grill pan, place the skewers in it and grill, rotating the skewers, till they are golden brown on all sides. In between,n baste them with a little butter.
- Remove the tikkas from the skewers and arrange them on a serving platter. Sprinkle a little chaat masala over them and serve immediately with green chutney, onion rings and lemon slices.
