Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Kesari Paneer Tikka - SK Khazana Recipe

  • Saffron soaked in water a large pi

  • Cottage cheese (paneer) cut into 1 inch cubes 250 grams

  • Fresh cream 3-4 tablespoons

  • Ginger-garlic paste 1 teaspoon

  • Green chilli paste 1/2 teaspoon

  • Gram flour (besan) roasted 1 tablespoon

  • Salt to taste

  • Chaat masala to sprinkle

  • Medium red capsicum cut into 1 inch squares 1

  • Medium green capsicum cut into 1 inch squares 1

  • Medium yellow capsicum cut into 1 inch squares 1

  • Butter for cookin for basting

  • Oil as required

  • Saffron a few stra to garnish

  • Green chutney to serve

  • Onion rings to serve

  • Lemon slices to serve

Method

Step 1

Take fresh cream in a shallow bowl, add ginger-garlic paste and green chilli paste and mix well. Add 3 tsps saffron water with a few strands. Add gram flour and mix well to make a thick marinade.

Step 2

Add salt and mix. Sprinkle chaat masala on the cottage cheese pieces and add them to the marinade. Mix well till all the pieces are well coated.

Step 3

Add red, green and yellow capsicums to the marinade. Sprinkle a little salt over them and mix well. Set aside for 10-15 minutes.

Step 4

Skewer the mixed capsicums and cottage cheese in this way: yellow capsicum, cottage cheese, green capsicum, cottage cheese and red capsicum. Similarly prepare more skewers.

Step 5

Heat some butter and oil in a non-stick grill pan, place the skewers in it and grill, rotating the skewers, till they are golden brown on all sides. In between baste them with a little butter.

Step 6

Remove the tikkas from the skewers and arrange them on a serving platter. Sprinkle a little chaat masala over them and serve immediately with green chutney, onion rings and lemon slices.
