How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Jain Sichuan Fried Rice Recipe

  • Cooked Rice 3 cups

  • Cabbage diced 1/2 small

  • Red cabbage diced 1/2 small

  • Red capsicum diced 1 medium

  • Yellow zucchini diced 1/2 medium

  • Green zucchini diced 1/2 medium

  • Black pepper powder to taste

  • Salt to taste

  • Sugar 1/2 teaspoon

  • Soy sauce 1/2 teaspoon

  • Oil 1 teaspoon

  • For Jain Sichuan sauce

  • Red capsicum finely chopped 1 small

  • Yellow capsicum finely chopped 1 small

  • Salt to taste

  • Celery finely chopped 1/3 cup

  • Red chilli sauce 5-6 tablespoons

  • Oil 11/2 tablespoons

Method

Step 1

To make Jain Sichuan sauce, heat oil in a non-stick pan. Add red capsicum and yellow capsicum and sauté. Add salt, mix and sauté till capsicums turn soft.

Step 2

Add celery, mix well and cook for two minutes. Add chilli sauce, mix well and cook till the oil leaves the sides of the pan. Transfer into a bowl.

Step 3

Heat one teaspoon oil in a non-stick wok, add cabbage and sauté. Add red cabbage and sauté. Add capsicum, yellow and green zucchini, mix well and sauté.

Step 4

Add black pepper powder, salt, sugar and soy sauce, mix well and cook.

Step 5

Add rice, Sichuan sauce and mix well. Cook for two minutes.

Step 6

Serve hot.
