Ingredients list for Jain Mexican Rice
- 1½ cups Rice soaked
- 2 tablespoons mexican paste
- 1 tablespoon Olive oil
- ½ cup Cabbage shredded
- 1 teaspoon Red chilli flakes
- 3 cups Vegetable stock
- to taste Salt
- ½ Corn kernels boiled
- ½ medium Green capsicum
Method
- Heat oil in a non-stick pan. Add cabbage and sauté till golden. Drain rice and add to the pan and mix well. Add Mexican paste and chilli flakes and mix well.
- Add 3 cups vegetable stock and mix well. Add salt, mix, cover and cook till rice is half done.
- Add corn kernels and capsicum, mix, cover and cook till rice is fully done.
- Serve hot.
